The best thing about chili is that you can easily swap a bunch of ingredients to give you the result you’d prefer. For example, if you hate mushrooms, you can easily replace it with tofu or some extra peppers. If you love spicy foods, you can also include turmeric and chili powder in the mix.

Fit and Fresh Cuisine Chili Recipe

Ingredients:

  • 2 tbsp of coconut or olive oil
  • 1 large bell of red pepper
  • 1 medium-sized ball of onions
  • 2 medium-sized carrots
  • ½ tsp of salt
  • 2 celery stalks
  • 2 tbsp of chili powder
  • 4 minced cloves of garlic
  • 2 tsp of ground cumin
  • 1 tsp of dried oregano
  • 1 ½ tsp of smoked paprika
  • 2 cans of black beans
  • 1 big can of diced tomatoes with juices
  • 1 can of pinto beans
  • 1 bay leaf
  • 2 cups of vegetable broth

Directions:

  1. Start by chopping the onion ball and mincing garlic. Mix both ingredients together and put them in a small bowl.
  2. Chop the other vegetables and leave them in separate bowls.
  3. Take out a large pot and pour oil in it. Add the onion and garlic combination and put it a stove set to medium heat. Stir the onion/garlic mix for 5 minutes, ensuring the onions are translucent.
  4. Add the remaining chopped vegetables and salt.
  5. Leave the mixture to simmer for about 5 minutes to ensure they are cooked.
  6. Add the chili powder, paprika, cumin, and oregano. If you love your chili extra spicy, add half a teaspoon of cayenne. Stir them all into the pot for about a minute.
  7. Add the diced tomato and its juice. If you want your chili to be thick, allow the tomatoes condense for 8-10 minutes.
  8. Add the bay leaf and vegetable broth and stir again.
  9. Add the pinto bean and drained black beans. Take down your chili and let it simmer for about 30 minutes. Then transfer one and a half cup of chili to a food processor or blender and blend it until it is smooth. Add it into your chili and stir it to give it some texture.
  10. You can taste it for salt and spices. If it’s up to taste, serve it with garnishes such as sour cream, cilantro or avocado.

It’s the holiday season, which means it’s time to get your cornbread game on! If you’d like a Southern cornbread dressing this Thanksgiving or Christmas, here is one recipe you will enjoy.

Southern Cornbread Dressing Recipe

Ingredients:

  • 1 cup of self-rising cornmeal
  •  ¾ cup of buttermilk
  •  ½ cup of self-rising flour
  • 2 tbsp of vegetable oil
  • 2 lightly beaten eggs
  • 3 crumbled pieces of toast or stale bread
  • 1 9×9 inch cornbread
  • 3 diced stalks of celery
  • 1 diced cup of onions
  • 1 diced cup of green or red bell peppers
  • 2 eggs
  • 3 cups of turkey or chicken broth
  •  1 cooked chicken breast or thighs
  • 1 tsp of sage
  • 1 tsp of poultry seasoning
  • 1 tsp of black pepper

Directions:

1.     Start by preheating your oven to 350 degrees Fahrenheit.

2.     To make your cornbread, whisk cornmeal and flour together in a bowl.

3.     Pour eggs, oil, and buttermilk into the mix.

4.     Stir the combination until it is well mixed. Be careful not to overwork the batter.

5.     Grease a 9×9 baking pan with oil or butter, and pour the batter inside it.

6.     Let it bake for about 25 minutes and then leave it to cool.

7.     When it is cool, break the cornbread and put the toast in the oven to dry. Once this is done, set it aside.

8.     Now make the dressing. Add the crumbled toast and the dried cornbread in a big bowl then set it aside.

9.     Take out a saucepan and add butter or olive oil. Then add the celery, green bell peppers, and onion and fry until tender.

10.   Pour the sautéed vegetables into the cornbread bowl.

11.   Also, shred the chicken and add it to the mixture.

12.   Stir it together until it is properly combined.

13.   Pour in the broth, a small quantity at a time until it is thick enough and a little soupy.

14.   Add the black pepper, sage, and poultry seasoning, and stir it together.

15.   Taste it to be certain the seasoning is the desired amount. If the seasoning is not enough, add some more.

16.   If you like the taste, you can proceed to stir the eggs.

17.   Butter a  x13 pan and pour the mixture into the pan.

18.   Bake it for about 45 minutes or until it is well baked.

Note that using day-old cornbread will give you the best result! Also, make sure you taste the mixture before adding your eggs, because if you don’t, you might have to make do with a lowly seasoned cornbread.
