Procedure

1. Toss the 8 pieces of chicken in one tablespoon of kosher salt. Put in a bowl, cover it, and put it in the fridge. Leave it overnight.

2. Crack your egg in a bowl. Pour in the hot sauce, buttermilk, and pickle brine. Whisk together. You have your marinade

3. Bring the chicken out and pour marinade over it. Mix well to ensure everything piece is coated. Cover and refrigerate for about 2-4 hours.

4. In a low bowl, mix flour and salt. Remove the chicken from the marinade and put on paper towels. Keep the marinade aside. Toss the chicken pieces in flour mixed with salt until it is well coated. Pour the chicken in the marinade and allow it to coat well.

5. Remove the chicken from the marinade and let the excess drip off. Coat with flour mixture again and place it on a rack. Leave for about 15 minutes to let the coating dry.

6. Put the butter and lard in a large pot. Pour in brown sugar, black pepper, cayenne pepper, paprika, and garlic powder. Cook over medium heat and stir until the fats melt. Take the pot off the heat and keep warm.

7. Place a pan over medium heat, add the groundnut oil, and heat up to 350 degrees Fahrenheit. Place chicken in the hot oil and fry, adjusting heat when necessary. Fry 8-10 minutes per side.

8. After frying, place the chicken on a rack and brush the two sides with warm sauce.

Your Nashville hot chicken is ready. You can serve it however you want, with pickles preferably. This recipe is highly nutritious and serves as a healthy meal.
